STORY BEHIND THE DISH:

slices toasted bread w/o curst |
1 stick margarine |
1/2
lb pork, ground |
1/2
cup chicken broth |

large onion, chopped |
poultry
seasoning |

whole stalk celery (5 sticks cut up) |
salt
& pepper to taste |

or 4 eggs |
milk
enough to moisten |
DIRECTIONS:
First break up toast & soak in milk. Cut up celery & onion, add pork, and simmer until done in 1/2 of margarine. Cool, then add to the toast which should be soft. Add eggs one at a time. Season to taste. Then in a skillet heat the balance of margarine and cook the dressing again until the eggs are done. Cool and stuff into cool bird. Rub chicken with shortening, sprinkle with flour and bake in covered roaster with 1/2 cup water at 350 degrees for 1 hr then at 250 degrees until done.
For turkey, triple the ingredients above.
