STORY BEHIND THE DISH:
No particular story, but it's just a great dish. My mom would make this mostly in the winter.
| INGREDIENTS: | |
| 1 cup carrots, finely chopped | 2 cups milk |
| 1/2 cup celery, finely chopped | 1/4 cup flour |
| 1/4 cup onion, finely chopped | 1 - 2 cups cheese, shredded cheddar |
| 1-3/4 cups chicken broth | dash of paprika |
DIRECTIONS:
In a sauce pan, combine carrots, celery, onion, and broth. Heat to boiling. Reduce heat. Cover and simmer for 15 min or until veggies are tender. Combine milk, flour, paprika, and salt, and stir into heated broth mixture. Cook and stir until thickened. Add cheese and stir until melted. Serves 4 people.
