STORY BEHIND THE DISH:

Mom cooked mostly from scratch, so I had to guess at some of the amounts and many times had to watch what she put in and then write it down as she did it, but we really enjoyed them.


INGREDIENTS:
Cookie Dough:  
1 cup brown sugar 1 cup white sugar
1 cup butter or oleo
1 tsp baking soda
4 cups flour (or more) 3 eggs
1-1/2 tsp salt 1-1/2 tsp vanilla
Filling:  
3 cups dates 2 cups chopped pecans
2 cups sugar 2 cups water

DIRECTIONS:

Mix cookie ingredients well. Divide into four parts and roll out the dough. The dough should be smooth, pliable, and soft, but stiff enough to roll out.

Prepare the filling and cool before spreading onto the dough: Combine the filling ingredients in a heavy saucepan and bring to a boil. Cook for 6 - 8 minutes, just so it will be thick enough to spread over rolled out dough.

After spreading the filling, roll up the dough and refrigerate over night. Slice about 1/4 inch thick, and bake until golden brown at 375 deg F (about 12 minutes).
